Organic key lime
Cistrus aurantifolia
Botanical Properties
Key lime is a citrus fruit that is often confused with the lemon fruit (otherwise known as Citrus limon). However, this fruit is different insofar as its peel is thinner and it is picked before reaching maturity, whilst its skin is a dark green. These dark green key limes are grown on bushes from the Rustaceae family.
Origin and history
Originating in India, key lime spread to the Mediterranean and South America. It has found a place as a key ingredient in exotic cocktails (rum punch, ti punch, margarita, etc.) but also in many dishes such as marinades, ceviche, salads, mousses, fish dishes, etc.
