Samphire organic
Crithmum maritimum
Botanical Properties
Samphire or Crithmum is a perennial plant that grows on the cliffs and rocks of the Atlantic and Mediterranean coastlines, and it is also known as "rock samphire" or "sea fennel".
It is a halophile, meaning that it grows in environments with high salt concentrations.
Samphire is a perennial plant of 20 to 50cm with a bushy shape and its leaves are alternate, thick and fleshy, full of a salty juice.
Its small yellow flowers blossom in small clusters, from July to October.
The green aromatic fruit are ovoid and ribbed.
Origin and history
Its Latin name Crithmum maritimum (from the Greek for "barley") is a reference to its fruit, which have the form of a grain of barley and which float on water.
The plant is rich in vitamin C and minerals, and seafarers in Antiquity carried bags of it with them on their journeys, in order to protect themselves from scurvy.
Samphire leaves and flowers are used as a condiment, raw in salads, pickled in vinegar or cooked with fish. The fruit can serve as a spice, thanks to the essential oil its contains.
