ORGANIC NUTMEG
Myristica fragans
Botanical Properties
Nutmeg comes from a tropical tree belonging to the Myristaceae family, which can reach up to 16m in height. Nutmeg is made from the albumins (the seed’s protein tissue) in the ovum of the fruit. There are over 70 species in the Myristica genus. This tree has evergreen, aromatic leaves, and produces ovaloid shaped fruits (this is only the case for the female plants). These fruits will reveal their nut, the famous nutmeg, once their pericarp and aril (red envelope around the seed, which gives us mace, a condiment) have been shed.
Origin and history
Originating in Indonesia, the Portuguese were the most prominent agents of its trade and exchange in Europe during the 15th century. Nowadays, it is cultivated from the Antilles to Grenada. In traditional medicine it is used for its digestion stimulating and anti-infectious properties. However, its reputation is principally based on its use in cuisine. It is used in both its dried and fresh form, and once grated becomes an ingredient in many varieties of curry. It is frequently used in Asian, Indian, and French dishes (such as béchamel sauce, and it is also used as a flavouring in gratins and flans).
